KALAMAZOO COUNTY, MI – One of the best dining options in the Kalamazoo area is unassumingly tucked away in the corner of a Texas Corners mall.

Established in 2009, Bold, at 6915 West Q Ave., prides itself on offering fresh, simple cuisine with great flavor.

“We’re all focused on fresh produce,” said executive chef Andy Havey, who has worked at the restaurant since day one. “We have a huge walk-in freezer which is virtually empty from the previous owner. “

Havey, who grew up in Kalamazoo and attended Culinary School in Charleston, SC, spent more than a decade in kitchens in Florida, Colorado, and California, before moving to be close to her. family and sign with Bold. Tuesdays in Bold are the most popular, as the restaurant offers 40% off all small plates – plates that normally cost between $ 15 and $ 29 on other nights.

To enter on a Tuesday, Havey said people should make reservations at least a week in advance. Reservations are advised every night, but weekends and Tuesdays fill up the fastest, he said.

Some of the most popular small platters include Bold’s Beef Tenderloin, made with pan-seared medallions and served with a whiskey pepper sauce and haystack onions; Brussels sprouts, which are roasted and served with red onion, homemade bacon and a balsamic reduction; and Shrimp and Avocado, made with crispy shrimp with ancho pepper frosting, avocado, buttermilk coleslaw and crispy corn tortillas.

Other small plates include wasabi steak tacos, Asian meatballs, and scallops.

Aside from the small plates, Havey said, Bold is best known for his filet mignon, a $ 45 cut of steak, grilled at temperature and served with a pepper and whiskey sauce, sautéed asparagus and boot onions. hay. Cowboy steak, a $ 55 rib eye served with roasted garlic, shallot, sweet potato gratin and haystacks, is also very popular, he said.

“Every day I hear someone say ‘The tenderloin is the best I have ever had,'” he said. “What sets it apart, I think, is the quality of the beef and the minimum amount of stuff we do in it. We just put salt and pepper on it and broil it at temperature. And our times are real steakhouse times. If you order a rare steak here it’s going to get cold.

All the beef, like the produce, comes from farmers in the Midwest, Havey said. Seafood, on the other hand, comes from everywhere, but it’s just as fresh, he said.

Used to buying fish through the back door of deep sea anglers in California, Havey serves Great Lakes whitefish and has a collection of vendors he works with who ship Alaskan halibut and Pacific Northwest salmon. and from Chilean Antarctic seabass in Honolulu to Kalamazoo.

“My salespeople tell me what’s on the dock one morning, and it’s in our kitchen the next day,” Havey said.

The restaurant, which can seat a maximum of 90 people, limits evenings to eight people per table to provide a more intimate atmosphere for guests.

One of the keys to the experience, Havey said, is that the staff want diners to be able to take their time.

“We are not heard to rush you,” he said. “Sometimes people who have never been here before are surprised that we don’t give you a menu when you sit down, but we won’t give you your menus until you’re ready. If you want to sit down and relax with a drink for half an hour first, that’s perfect. We are all experience driven.

In addition to Bold, Shane and Jeanna Sheldon also own an interest in The Grille Room at Moors Golf Club in Portage and two other Texas Corners restaurants – Holy Taco, at 6942 W. Q Ave., and Gusto, at 6997 WQ Ave. ., the latter is temporarily closed due to personnel problems.

Bold is open for dinner from 5:00 p.m. to 9:00 p.m. Tuesday through Thursday, 5:00 p.m. to 10:00 p.m. Friday and Saturday, and closed Sunday and Monday. The bar and lounge open at 4 p.m. nightly for cocktails when open.
